Toad in the Hole (Gluten Free)

We have taken the traditional winter favourite Toad in the Hole and altered the batter recipe to fit easily into the UPAN and meet a gluten free diet
For the sausages we recommend using a spicy meaty thinner sausage (chipolata)  with plenty of flavour, you can also use breakfast sausage as well.

Ingredients

4 x Sausages (chipolatas or similar)
2 x Eggs
80ml of Milk
100g (2/3cup) Corn Flour (gluten free)
1 Tbsp of butter or lard

Seasoning Options

When adding seasoning to the batter and using a plain sausage we recommend any of the options below. If you are using a meaty flavoured sausage we recommend only to salt the batter 
  1. Fine ground pepper  ¼ tsp white pepper plus ¼ black pepper ½ tsp salt (if you only have black pepper still only use ¼ of a tsp)
  2. English mustard powder  ½ tsp plus ½ tsp of salt 
  3. Paprika powder ¼ tsp of hot plus 1 tsp of sweet plus ½ tsp salt 

    Method

    Batter mix

    1. Measure the corn flour and add the eggs into a bowl (if using english mustard pre mix it with the flour then add the eggs, this is to avoid lumps). Then beat together with a whisk
    2. Add the milk gradually to the eggs and flour to avoid lumps then whisk until smooth. The mix needs to be thin enough so the batter runs easily around the sausage in the pan. So add more milk if required a Tbsp at a time.
    3. Season to taste 

      Toad in the Hole

      1. Preheat the oven to 200c
      2. Add the butter to the UPAN, then heat on a low to medium heat until the butter starts to clarify (go from yellow to brown)
      3. Lay the sausages out in the UPAN and quickly turn them as they sear (this will take under a minute) .You do not want to cook the sausage all the way through, you want the sausages to release there flavours and juices into the batter while in the oven
      4. Remove the pan from the heat, then pour the batter around the sausages into the UPAN channels lifting the sausage if required then, pour the last of the batter over the top to seal in the sausages
      5. Place the UPAN mid height in the oven and cook for between 17 to 20 minute. Always check at 17 minutes as sometimes that is all that is required

       

        Remember

        • To remove the Toad in the Hole from the UPAN use a knife to lift a corner, then slide a fish slice underneath or just turn the whole UPAN upside down, the Toad in the Hole will drop out on one piece 
        • If you don't have eggs you can substitute them for 80 grams of plain yogurt
