Toad in the Hole

 

Ingredients

4 x Sausages
We recommend using a meaty breakfast sausage due to their size and
that they will release the most liquid once cooked adding flavour the batter
2 eggs
80g or 2/3 cup of Plain Flour
80ml of Milk
Seasoning

Gluten Free Option

2 eggs
100g or 1 cup of Corn flour
80ml of Milk
Seasoning

Onion Gravy

1 Onion (diced)
1 OXO Beef Cube or Equivalent
1 Tablespoon of Butter
1 Tablespoon of Flour (Plain or Cornflour)
1 Cup of Hot Water (just boiled)

Instructions 

Batter

1. Add the flour and eggs to a bowl and then beat together with a whisk
2. Add the milk gradually to the eggs and flour to avoid lumps.
3. Season to taste 

Cooking

1. Preheat the Oven to 200c
2. Heat the UPAN to a moderate heat
3. Sear the sausages quickly all the way around (you do not want to cook the sausage all the way through )
4. Remove the pan from the heat and pour the batter over the sausages into the UPAN channels
5. Place the UPAN mid height in the oven and cook for between 17 to 20 minute

Onion Gravy

1. Place the onions and butter in a pan on a low heat cook until yellow/brown.
2. Crumble the Stock Cube into the cup of hot water
3. Add the flour to the onions and butter and stir in (you may need to add more butter if all the flour has not desolved)
4. Carefully brown the flour and onions (this stage will affect the final flavour)
5. Gradually add the stockcube and hot water mix to the pot using a whisk to mix them togeather 

Caution

When you remove the UPAN from the oven the handle will be HOT

Helpful Hints

1. To remove the Toad in the Hole from the UPAN use a knife to lift a corner, then slide a fish slice underneath.
2. For seasoning as well as Salt and Pepper you can try Mustard Power or Paprika
